Checklist: Decommissioning of PALUX equipment for a longer period of time
During longer periods of business closure - e.g. during the mandatory shutdown in the context of the Corona pandemic - restaurateurs should have the existing kitchen equipment professionally decommissioned. This helps to prevent damage in advance.
In addition, hygiene is also guaranteed during the period of decommissioning and subsequent re-commissioning – thus preventing contamination of the equipment.
Checklist: Decommissioning
Generally applies to all PALUX devices:
- For your own safety: Installation, maintenance and repair work may only be carried out by gas or electrical specialists.
- Always wear protective gloves and protective clothing!
- Please also follow the instructions in the respective original operating manual!
- Only use original accessories and original spare parts.
- We also recommend that you conclude a maintenance contract with the customer service. This will ensure that you are always well supported – even in these difficult times.
For Thermal Appliances
- Perform complete cleaning of the device
- Drain operating fluids (e.g. oil / grease in deep fat fryers or water in bain-maries) from the appliance
- Switch off the device properly
- For electrical appliances: Switch off the power
- For gas appliances: Turn off gas supply
- If problems occur, always call a service technician
For Combi-Steamers and Pressure Steamer
- Perform automatic cleaning of the device
- Remove and clean the water manifold, then reinsert and screw it in
- Flush the drip pan and drain channel
- Switch off the device properly
- Empty all dosing lines (cleaner)
- Turn off water supply
- Empty the pull-out shower (if present)
- For electrical appliances: Switch off the power
- For gas appliances: Close gas supply
- Clean grease and dirt from the door seal
- Lean on the door and do not close it completely
- If problems occur, always call a service technician
For Refrigeration
- Remove food
- Perform complete cleaning of the device
- Switch off the device properly
- Power off
- For refrigerated drawers: leave all drawers slightly open
- For blast chillers: leave the door slightly open
- If problems occur, always call a service technician
For Dishwashing Machines
- Perform complete cleaning of the device
- Switch off the device properly
- Empty the tank
- Empty all dosing lines (cleaner and rinse aid)
- Turn off water supply
- Power off
- Attention: Reverse osmosis systems must remain connected to electricity and water
- If problems occur, always call a service technician
