What could be better for a restaurateur than the dream of owning a restaurant in Paris? That's right: two restaurants in Paris! Nico Alary (owner) and Sarah Mouchot (chef) have made this dream come true with their grandiose Holybelly café. With two restaurants, both on the same street, Holybelly also offers two different experiences. From pancakes to speciality coffees and craft beer, the Holybelly 5 delivers a wide range of tasty offerings. In addition to homemade breakfasts, the restaurant also offers daily specials, with a particular focus on seasonality made from the finest ingredients.

"We were inspired by our time in Melbourne, where it's easy to get up and have a delicious, tasty breakfast and delicious filter coffee. Having both worked in Melbourne, Sarah in the kitchen and me - Nico - behind the bar, we're excited to bring a little of that unique Melbourne experience home to share with the rest of Paris."

Genuine hospitality, quality ingredients and consistency are among the main focuses at the cult Parisian café. And quality ingredients don't just mean the food, the Holybelly team has also focused on perfection when it comes to kitchen technology. With the PALUX Topline, the Holybelly is technically at the highest level.

The kitchen unit is equipped with four of our PALUX Topline Vario cookers. These guarantee the best cooking and roasting results and the lowest heat radiation, which also leads to a pleasant working climate. Also included is an electric PALUX two-pan deep fryer, a Topline cooling unit and a PALUX Salamander Variolift C, which not only impresses with its simple operation and economical energy consumption, but also with its design.

At over six metres long, this PALUX Topline line is a true multi-functional weapon and even the longest PALUX kitchen in the whole of Paris. Handling an average of 450 meals - well over 600 on peak days - this kitchen, with its staff, operates seven days a week and has never let the Holybelly team down.

"It's good because we care" - that's the motto of the Holybelly café, because Holybelly is like a real family.

Owner Nico also shows this daily on Instagram. There you can not only see the perfectly prepared dishes and satisfied customers, but he also regularly gets his team and his kitchen technology in front of the camera.
