Restaurant La Grange

Located directly on the beautiful harbour of Bayonne, the cultural capital of the French Basque Country, La Grange opened in March 2018. With a view of the spires of the cathedral, the restaurant with its terrace is located directly on the Nive, which immediately invites you to linger with its warm atmosphere.

It was in Switzerland that chef Jacques Diharce first got to know PALUX and our products for the catering kitchen. In the end, he chose high-quality kitchen technology from PALUX for his own restaurant, which is reflected in the dishes and creations.

In order to leave nothing to be desired, Jacques decided on the ergonomic PALUX Topline Twin-Go kitchen series with our partner AFT in Arbonne, who were responsible for the planning and installation. This can be used on both sides, is double-sided and super compact, thus offering maximum performance in the smallest of spaces.

The kitchen unit is equipped with a PALUX Topline induction cooker and three PALUX Topline Vario cookers in two different sizes, which PALUX calls the multifunctional universal appliance for the professional kitchen.

Every day, guests at La Grange, which seats 50, are offered a variety of dishes consisting of regional products and spices. All ingredients are carefully selected by chef Diharce. Monkfish, sea bass and co. come from the coast, and the meat is also prepared traditionally. Thanks to the visually appealing, loving presentation on the plates, you can immediately see and taste that the products used are of the best quality and fresh from the market.
